Minced Oysters

Our State reader Joan Knowles shares her mother's recipe for minced oysters.

Joan Knowles, from Zephyrhills, FL, shares her mother’s recipe for minced oysters. Her mother, Katherine Chandler was from Charlotte.

Minced Oysters

Serves 12 to 15

  • 1 quart oysters, partially drained
  • 1 pint soft bread crumbs
  • 1 tablespoon onion juice
  • 1 tablespoon lemon juice
  • ½ cup soft butter
  • 4 eggs
  • salt, pepper and pinch of dry mustard
  • Chop oysters and mix with bread crumbs. Add butter and seasoning. Heat this mixture in top of double
    boiler and add the eggs after beating them. Place in buttered casserole dish and cover with cracker crumbs. Brown in hot oven.

    Cook’s notes: Squash are good prepared the same way with chopped onion. Half of recipe is normally enough.
