• 1.5 Tbl. firm packed light brown sugar
  • 1.5 tsp. ground cumin
  • 1.5 tsp. garlic powder
  • 1 tsp. cinnamon
  • .5 tsp. crushed red pepper flakes
  • 1/8 tsp. salt
  • 2 sweet potatoes peeled and sliced into 1/8 inch slices.
  • 1 Tbl. olive oil

In small bowl mix all the dry ingredients. Put potato slices in the bowl and mix. Add olive oil and continue to mix until all potato slices are coated. Heat skillet to medium heat. Do not overlap the potato slices. Cook lightly until browned, flip to other side and finish cooking until lightly browned. Transfer to a warm plate and cover.
