Coffee Cake

½ cup butter, melted
1 cup brown sugar
3 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons lemon zest
¾ teaspoon baking powder
¼ teaspoon salt
3 Krispy Kreme Glazed Blueberry Cake Doughnuts
21 ounces blueberry pie filling

Streusel Topping

2 Krispy Kreme Glazed Blueberry Cake Doughnuts, finely chopped
¼ cup butter, softened
¼ cup brown sugar

Preheat oven to 350° and grease an 8 x 8-inch pan.

Mix butter, sugar, eggs, and vanilla extract on medium speed until smooth. Gradually add dry ingredients to form a batter.

Spread a third of the batter into bottom of baking dish. Crumble 3 doughnuts and sprinkle on top of batter. Spread pie filling over the doughnuts. Add remaining batter in large spoonfuls over the filling.

For the streusel topping, combine ingredients until crumbly. Apply topping evenly to the baking dish.

Bake for 45 minutes or until topping is golden brown.
