Banana Bread

EDITOR’S NOTE: Former Our State Account Supervisor Diane Silva shares her mother’s legendary banana bread recipe.


Yield: 1 loaf.

2 bananas, mashed
1¾ cup sifted flour
½ teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon salt
1 stick butter
1½ cups sugar
2 large or extra large eggs
1 teaspoon vanilla
¼ cup milk
1 teaspoon white vinegar

In large mixing bowl, mix melted butter and sugar. Cream together. Add 2 eggs, one at a time. Add vanilla. Sift all dry ingredients together and slowly add to mixture in bowl. Mix well by hand. Add bananas (mash with a masher or fork first). In a small measuring cup, mix the milk with white vinegar to sour, and add that to the mixture.

Grease and flour a loaf pan. Add mixture and bake for about 55 minutes at 350º or until toothpick comes out clean. Cool on rack, then enjoy. Confectioner’s sugar sprinkled on top makes it look pretty.
