A Year-Round Guide to Franklin and Nantahala

Ingredients: 2 eggs ¾ cup brown sugar ¾ cup molasses ¾ cup melted shortening 2½ cups flour 2 teaspoons baking soda ½ teaspoon baking powder 1½ teaspoons cinnamon ⅓ teaspoon

Rosemary and Goat Cheese Strata

Ingredients: 2 eggs ¾ cup brown sugar ¾ cup molasses ¾ cup melted shortening 2½ cups flour 2 teaspoons baking soda ½ teaspoon baking powder 1½ teaspoons cinnamon ⅓ teaspoon

Gingerbread

Ingredients:

  • 2 eggs
  • ¾ cup brown sugar
  • ¾ cup molasses
  • ¾ cup melted shortening
  • 2½ cups flour
  • 2 teaspoons baking soda
  • ½ teaspoon baking powder
  • 1½ teaspoons cinnamon
  • ⅓ teaspoon cloves
  • ⅓ teaspoon nutmeg
  • 2 teaspoons ginger
  • 1 cup boiling water

Directions:

Preheat oven 350º. Grease a 9 x 13-inch pan (no smaller). Mix together eggs and sugar, and molasses and shortening. In a separate bowl, sift together flour, baking soda, baking powder, cinnamon, cloves, nutmeg, and ginger. Combine the two mixtures, then slowly stir in the boiling water. Bake 30 to 35 minutes (be careful not to overbake as it will become too dry).
