Spiced Peach Pickle Salad

Spiced Peach Pickle Salad

Serves 8 – 10.

Ingredients:

  • 1 package lemon jello
  • 1 package peach jello
  • 2 cups boiling water
  • 1 cup pickle juice
  • 1 can or jar of spiced peach pickles
  • ½ cup finely chopped celery
  • ½ cup finely chopped pecans

Directions:

Drain pickles; reserve juice. Pour boiling water over gelatin. Stir until gelatin is dissolved. Add pickle juice. Cut peach pickles into bite-sized pieces and add to gelatin. Stir in celery and nuts. Pour into mold and congeal. Cook’s note: Spiced peach pickles can sometimes be hard to find in the grocery store. When fresh peaches are available, Anne Stewart suggests making your own!
