Tzatziki (Greek Cucumber Sauce) 1 pint plain or Greek yogurt 1 unpeeled cucumber, finely chopped 1 clove garlic ½ cup olive oil juice of half a lemon 1 teaspoon salt
Add cucumber, garlic, olive oil, lemon juice, and salt to yogurt. Blend well with a fork. Top with parsley. Refrigerate. Serve as a dipping sauce or spread on pita.
