Tzatziki (Greek Cucumber Sauce)
- 1 pint plain or Greek yogurt
- 1 unpeeled cucumber, finely chopped
- 1 clove garlic
- ½ cup olive oil
- juice of half a lemon
- 1 teaspoon salt
Add cucumber, garlic, olive oil, lemon juice, and salt to yogurt. Blend well with a fork. Top with parsley. Refrigerate. Serve as a dipping sauce or spread on pita.
