Skyline Apple Muffins

Makes about 15 muffins

Ingredients:

  • 1½ cups firmly packed brown sugar
  • ⅔ cup vegetable oil
  • 1 egg
  • 1 cup sour milk
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2½ cups all-purpose flour
  • 1½ cups diced apples
  • ½ cup chopped pecans
  • ⅓ cup sugar
  • 1 teaspoon melted butter

Directions:

In a small bowl, combine brown sugar, oil, and egg. In a large bowl, combine sour milk, baking soda, salt, and vanilla. Add sugar mixture to milk mixture alternately with flour, beating well after each addition. Fold in apples and pecans. Separately mix sugar and butter. Pour batter into muffin papers or pans and sprinkle with sugar/butter mixture. Bake at 325º for 30 minutes, or until cake tester comes out clean.
